As a person who works from home full time, I'm constantly on the lookout for tasty, easy breakfast ideas. My ideal meal is something I can make in the time between walking the dog and logging on to work. And I have to say, this breakfast idea from TikTok is a winner in that regard.

The recipe in question, from user @traveleatrepeatuk, didn't have a name beyond being labeled "breakfast in air fryer." So, for lack of a better term, I'm calling it "omelette toast" because, well, that's basically all it is: beaten eggs, veggies, and cheese, all cooked on bread.

The recipe has amassed a whopping 7.3 million views on TikTok. And I can see why. I takes a good thing — an omelette — and makes it portable and handheld on delicious toast. What's not to like? Now, I did tweak the recipe a bit for AirFryDay based on the ingredients I had on hand and what I prefer. Basically, I like to add jalapeño to everything.

Here's what you need to know.

one egg per slice of bread you intend to make

jalapeño, finely diced

Crack the egg(s) into a bowl and beat until no streaks remain.

Toss the diced onion, tomato, and jalapeño into the egg. Mix together. You want enough veggies to really fill up the egg mixture.

Season generously with salt and pepper.

Add cheese to the egg mixture and mix together. Use roughly one generous pinch of each cheese per egg. (So if you use two eggs, you want four total pinches of cheese.)

Using a spoon, press down on each slice of bread to create a square-shaped well. The idea is to create a border to keep the egg mixture inside the bread.

Cover the grate of your air fryer in parchment paper to prevent any mess.

Coat your parchment-covered air fryer basket with nonstick cooking spray then drop the bread in it. Pour the egg mixture into the bread. Air fry for seven minutes at 320 degrees.

Flip the bread and air fry for about three minutes at 400 degrees.

Flip again, top with more cheese, then air fry for one minute at 400 degrees or until cheese is melted.

First things first: You almost certainly do not need to cook your omelette toast the entire time. My directions above are a shortened version of the original recipe and even that probably cooked the toast a bit too much. I enjoy dark toast, however, so I didn't mind. Just keep an eye on your toast and cook it until your desired color.

Another thing: This is the perfect recipe to make your own. In fact, the original TikTok from @traveleatrepeatuk seemed to use herbs and bell pepper, in addition to tomato, onion, and hot peppers. Basically, I think anything you'd like in an omelette would go really well. This is the kind of recipe where you can empty your fridge of whatever you have on hand.

This is a really simple recipe. That's the point. There's not much to it. If you trust your bread-well-making abilities, however, you could make this recipe even easier. If you do not put parchment paper on your grate, then your air fryer will work as intended and circulate air throughout the basket, meaning the underside of the toast will cook faster and without being flipped. If you're confident it won't make a mess, you could probably cook your omelette toast, sans parchment, in five minutes at 350 degrees.

But staying (mostly) true to the TikTok recipe works as well. Here was my final product:

The verdict? It's cheesy, eggy goodness. The veggies retain a bit of crunch, while the egg and cheese meld together. It's an omelette-style breakfast sandwich, in effect. I really enjoyed it.

You could pop this in the air fryer and have a super simple but tasty breakfast in just a few minutes. What could be bad about that?
